recipe:

  • 500g flour (use whichever, I typically use spelt flour)
  • 2 tbsp baking powder
  • 125g vegan butter (usually use margarine)
  • 125g sugar (usually use raw cane sugar)
  • 250ml vegan milk (usually use oat milk)
  • 175ml sparkling water

mix the butter and the sugar, add the dry ingredients, then the wet ingredients, then knead the ingredients together until you have a nice dough. you could also add some vanilla sugar, matcha powder for flavour/colour, or gingerbread spice for a christmas-y vibe.

    I usually add eggs (though lately, not so much) and protein powder to mine to boost the protein a lot

    It also changes the fluff of them, they hit your stomach like a brick

    I mostly use cream cheese as a topping and not syrup as well (though sometimes I end up with an insatiable craving after a workout for sugar and then I hit them with some maple syrup)

      Being vegan, I’d probably add chickpea flour instead of the eggs, then. Do have protein powder too, but I’m not sure how well it’d dissolve in the dough, though?

        That was my concern as well when I first went to add it, so I get around that by dissolving it in the milk before I mix the milk with the flour. That way I know it’s dissolved fully and I won’t end up with any clumps of it.
